Part-Time Professional Baking & Pastry Course

Our Professional Baking and Pastry Course is a weekend course in Johor Bahru, built for working adults who want professional training without giving up their job. Classes run on weekends, from 9:00am to 6:00pm, across four stages. You start with Stage 1, a complete Professional Baking Foundation, then decide on each stage after you finish the one before. Nothing later is booked or charged until you say yes.

You learn more than the recipe: what each ingredient is doing, why a technique is done one way and not another, why a batch fails, and how to make a product hold its quality for days. It is a Pastry Art Academy course, taught in our professional kitchen in Ulu Tiram, Johor Bahru, and separate from our Level 2 and Level 3 Diploma programmes.

What you'll learn, stage by stage

• Stage 1, Professional Baking Foundation: bread, cakes, cookies, tarts and desserts, with ingredient knowledge and product stability
• Stage 2, Professional Order Production: celebration cakes, made-to-order products, packaging and order costing
• Stage 3, Commercial Baking and Production: commercial bread, café products, batch production and shelf life
• Stage 4, Bakery Business Launch: food costing, selling prices, menu planning and a bakery launch project
